A SUMMERY TREAT
So here is an idea: we all need a sweet pick-me-up during the day, so let’s cook a light, delicate cake. It’s easy and it doesn’t take long to make!
We recommend a summery cake made with greek yogurt, strawberries, and chopped dark chocolate (Magnifico recommends Organic Ecuador dark chocolate from Venchi). It’s great for breakfast, tea-time, or in the late afternoon, served cool.
RECIPE
First, preheat your oven to 320 degrees and prepare your ingredients. You will need yogurt (4 oz), flour (16 oz), sugar (5 oz), strawberries (10 oz), 3 eggs, half a glass of milk, a teaspoon of baking powder, and as much or as little chocolate as you want. Start by mixing the sugar and the yogurt in a large bowl. Next, add three eggs and milk, little by little. Once the ingredients are fully integrated, slowly work the flour into the mixture with an electric mixer. Before adding the baking powder, cut the strawberries into small pieces and butter the pan.
Once your oven is hot, add the baking powder to the mixture, followed by the chocolate chips, and pour your batter into the pan. Arrange the pieces of strawberry on top and bake for 35 minutes.
READY TO SERVE
When your cake is ready, leave it in the oven for a few minutes, then take it out and let it cool before removing it from its pan. Sprinkle the cake with powdered sugar to serve. This butter-free, light cake is delicious and easy to make, so enjoy!
