Why Is Acquerello Rice Different?

Acquerello begins with selected Carnaroli rice grown at Tenuta Colombara, in the heart of Italy’s rice-growing area near Vercelli.

Before milling, the rough rice is aged for at least one year in temperature-controlled silos. During this period, the starch becomes more stable, helping the grain maintain its structure during cooking and absorb sauces and seasonings more effectively.

How to Cook Acquerello Rice

Acquerello is ideal for traditional risotto, seafood risotto, mushroom risotto, saffron risotto, rice salads, arancini and other Italian rice dishes.

For Acquerello’s simplified “Risotto Non Risotto” method, use approximately 1 part rice to 3 parts salted water or broth by weight.

Add the rice once the liquid is boiling and cook for approximately 10 minutes. Remove from the heat, add butter, extra virgin olive oil, cheese or other ingredients, then allow to rest for approximately 5 minutes to absorb the remaining liquid and develop a creamy texture.
