Rustichella d’Abruzzo Orecchiette Pugliesi are a traditional Italian pasta shape inspired by the culinary heritage of Puglia.
The name orecchiette means “little ears” in Italian, referring to the pasta’s small, rounded and slightly concave shape. The center captures sauce, vegetables and small pieces of sausage, while the thicker edges maintain a firm and satisfying al dente texture.
Made with durum wheat semolina and water, Rustichella d’Abruzzo pasta is extruded through bronze dies and slowly air-dried at low temperatures. This traditional production method gives the pasta a naturally rough surface that holds sauce more effectively than smooth industrial pasta.
What Are Orecchiette?
Orecchiette are a traditional short pasta shape associated with Puglia in southern Italy.
Their name literally means “little ears” because of their distinctive round and concave shape. Traditionally, the pasta is formed by dragging or pressing small pieces of dough to create a rough interior and thicker edge.
In Abruzzo, a similar shape is sometimes called Orecchie di Prete, meaning “priest’s ears.”
