Rustichella d’Abruzzo Organic Timilia Busiate combine a traditional Sicilian pasta shape with one of the island’s most distinctive heritage wheat varieties.
Busiate are long, loosely twisted pasta spirals traditionally associated with western Sicily. Their curled shape captures pesto, chopped tomatoes, almonds, seafood and other textured Mediterranean sauces.
This artisanal pasta is made with organic Timilia durum wheat semolina and water. Timilia—also known as Tumminia—is an ancient Sicilian wheat variety with a naturally rustic character and a rich, nutty flavor reminiscent of traditional Sicilian bread.
Rustichella stone-grinds the dark Timilia grains into semi-whole wheat semolina before combining them with spring water. The pasta is then bronze cut and slowly dried to create a firm texture and porous surface that holds sauce beautifully.
Busiate are a traditional Sicilian pasta shape made from thin tubes of dough twisted into loose spirals.
The name is commonly connected to the buso, a narrow knitting needle historically used to shape the pasta. Another interpretation links it to the Mediterranean grass once used by farmers to bind sheaves of wheat.
Their twisted structure is particularly effective with sauces containing finely chopped ingredients, because tomatoes, almonds, herbs and seafood settle between the curves.
