At the heart of Midolini's success is their artisanal approach to balsamic production. They exclusively craft balsamic condiments from the finest raw materials. The journey begins with the selection of the company's grapes, which are destemmed and pressed to extract fresh must. The must is then meticulously cooked at high temperatures for up to 60 consecutive hours.

A significant portion of the must finds its way into wooden vats, embarking on a journey of aging and refinement in batteries made of seven different precious woods. The remaining must is reserved for bottling their esteemed Gourmet line.

Recent research conducted by the University of Udine and Trieste has unveiled the nutraceutical properties of Midolini Balsamic. The Vineyards


Acetaia Midolini is a single estate with 100 hectares of land, including 35 hectares of vineyards. Situated exclusively in hilly regions, these vineyards benefit from the unique terroir of Colli Orientali del Friuli, a designated origin of origin (DOC) that protects the region's characteristics, creating a superb environment for high-quality grapes.
