Summer is time for light and quick dishes

Finally, we can enjoy the sun, the sea, and the warm weather. When it's hot, none of us feel like spending long hours in the kitchen cooking. What are the watchwords of a summer dish? Speed, lightness, and freshness. Today we propose a series of effortless and quick recipes that will allow us to eat well and healthy without spending too much time at the stove. For example, we suggest you choose dishes that do not require cooking. 

Caprese salad

Preparing this delicacy takes precisely five minutes. You can choose it when you are alone and when you have guests. The dish is super easy to make, but you need to use the freshest and highest quality ingredients. This salad is named after the beautiful island of Capri, one of the most magical places in Italy. You need mozzarella (preferably buffalo cheese from Campania), tomatoes, basil, and extra virgin olive oil.

Squid and tomato salad 

If you want to prepare fish, we recommend a tasty salad of squid and cherry tomatoes. Again you will need very little preparation time. The ingredients are: fresh squid, cherry tomatoes, oil, lemon, and salt. The first thing to do is to quickly (4 minutes will be enough) boil your cleaned squid in salted water; in the meantime, chop the tomatoes and season them with oil, salt and lemon; add the squid and mix gently.

Watermelon and cucumber salad

Watermelon and cucumber salad is the ambassador of summer. The flavors associated with the beautiful season are embedded in this dish. The preparation is extremely easy. You will only need a few slices of watermelon, melon, cucumbers, and feta cheese (alternatively, you can also try pecorino cheese). After dicing the ingredients, dress them with a vinaigrette prepared with two tablespoons of extra virgin olive oil, two tablespoons of honey, two tablespoons of lemon juice, chopped basil, and a pinch of salt.

Fresh fava bean salad

Fava bean salad is a fresh and simple dish that can be prepared quickly. The main ingredients are fava beans and tasty pecorino cheese. This is a beloved pair in Tuscany; in this region, according to tradition, freshly harvested fava beans are eaten and served with a slice of bread and extra virgin olive oil. You can use this dish either as a side dish or as an appetizer. Put the peeled fava beans and diced pecorino cheese in a bowl; add chopped mint leaves, a pinch of salt, a drizzle of oil, and a sprinkle of pepper.

Strawberry salad

Strawberry salad is a delicious fruit and vegetable salad. You can serve it either as an appetizer or as a side dish. You will only need these few ingredients: chopped strawberries, a few leaves of arugula, a few leaves of fresh spinach, diced feta or shredded Parmesan cheese, a few walnuts, a drizzle of olive oil, a splash of balsamic vinegar, and a pinch of salt.
