HALLOWEEN PUMPKIN SOUP WITH A TWIST

It's Halloween again; our favorite time of the year! Are you throwing a spooky, fun party? We are here to recommend you an easy and yummy recipe for you and your guests. Of course, it is a dish made from pumpkin, the orange queen of Halloween! Let’s prepare a tasty zuppa di zucca, a pumpkin soup, with a twist…the unexpected edible bowl.

 

INGREDIENTS

For four servings, you will need: 4 small-medium yellow pumpkins, vegetable broth (2 cups), shallot (1, diced), sage, extra virgin olive oil, Parmigiano Reggiano (2 oz), butter (2 oz), salt, black pepper. Get also some amaretti cookies to garnish your soup. You can also achieve a more intense color by adding a little saffron.

 

DIRECTIONS

Cut off the stem of the pumpkins; They will serve as a lid for your pumpkin bowl. Carefully scoop out the “pumpkin brains” fibrous strands and seeds. You could use a large spoon. Make sure to remove all fibrous stands and seeds. In a saucepan heat 5 tablespoon of extra virgin olive oil with butter and add sage and shallot. Let them gently cook for 3 minutes, then add the pumpkin pulp and, after some minutes, warm broth. Cook for half an hour. Take off the sage and blend your ingredients with a food processor adding Parmigiano Reggiano. If you think that your soup is too liquid, you could add a pureed potato. Now, ladle the soup into the pumpkins for serving. Do not forget to sprinkle with black pepper and crumbled amaretti cookies. Finish with extra virgin olive oil.
